Pumpkin Cookie Recipe

These wonderful spiced pumpkin cookies make a great fall treat for you and your family. Pumpkin makes a great fall season ingredient that also provides you with many health benefits. Read all about the health benefits of pumpkins here.

2 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/2 cup butter (1 stick), softened
1 large egg
1 cup canned pumpkin
1 teaspoon vanilla extract
½ cup dried and crushed pumpkin seeds
Preheat oven to 350° F. 
In a large bowl combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl and set aside. In a medium-sized bowl, beat sugar and butter until creamed and blended. Beat in pumpkin, egg and vanilla extract. Slowly, beat in flour mixture. Use a tablespoon to scoop and dough onto baking sheets. Sprinkle crushed pumpkin seeds on top. Bake cookies for 15 to 18 minutes or until edges are firm. Let cool on wire rack, then enjoy!
